Duck meat (whole duck) Salt 1tea spoon Cumin 1tea spoon

Recipe

Wash and dry the duck then sprinkle salt inside and all over the duck. Place the duck (breast side up) on a roasting tray (metal or glass tray with a lid). Close the tray and place in the preheated owen (not a fan owen) on 120 degrees celsius and roast for 5 hours without opening the owen or the lid of the tray. After 5 hours you will end up with a delicious roasted duck with a lovely crispy skin laying in its own fat and delicious juices. Enjoy your meal.

Baked salmon with creamy potato

Salmon has been an important dish in the northern countries for a long time. This dish combines the delicious salmon with other swedish flavours like mushroom and thyme.

Ingredients

Ingredients for four portions: 500 grams of salmon fillet 1 tablespoon olive oil 1/2 teaspoon salt 750 grams of potato 1/2 yellow onion 4 dl hen broth 1 tablespoon of butter 2 dl cr?me fraiche 1/2 lemon spices (thyme) Handfull of Karl Johan mushrooms (or any mushroom you might like to add)

Recipe

Turn on the oven at 125 degrees celcius. Brush the salmon with olive oil and then salt it. Put the salmon in the oven for about 15 minutes. Peel and cut the potato in 1x1 cm cubes. Peel and chop the onion to little pieces. Fry the onion in the butter until it´s soft, then add the potato and broth. Boil in low temperature without lid until almost all the fluid has boiled away, that should take about 15 minutes. (While your waiting; cut the mushrooms to little pieces) Add crème fraiche, mushrooms, thyme and squeeze a little lemon to the potatoes. Let it start to boil. Taste it and add spices of your choice, for exemple salt and pepper. Serve the salmon along with the potatoes and sauce. Enjoy

Typical dish of Easter

Ingredients

-for the sheet: 400g of flour, 3 whole eggs, 5 yolks, 50g of suet and a teaspoon of olive oil. -for the stuffed:4 eggs, 250g of cow cheese, 250g of pecorino, chunks of ham, salt and pepper to taste.

Recipe

Put the flour, the eggs, the yolks, the suet and the oil in a bowl and mix everything until you get a soft dough. Spread it into a thin sheet and put it in a baking dish. For the stuffed, beat the eggs with the cheese making him fall like a rain and add the ham and a pinch of salt and pepper. Fill the sheet with the stuffed and sweep the surface of the Fiadone with a yolk. Finally bake it in a oven at 180° for about thirty minutes.
